Freezing Chile Peppers
This may sound complicated, but actually very simple and works well for the thicker flesh chiles. You may want to de-stem and seed the chiles first. Place clean chiles in a strainer and place in a large pot 1/3 full with boiling water. Steam for about six minutes. Immediately dunk in to a pot of ice water and stir around until thoroughly chilled. Once chilled, let drain and dry and place in plastic freezer bags. Consider separating into small quantities, so that you can take out just what you need.
